Ingredients
1 tablespoon of olive oil.
350g potatoes, sliced thinly.
1 large onion, sliced thinly.
6 large eggs.
Salt and ground black pepper.
Leftover spicy sausage or ham (optional).
Cheese to sprinkle over.
Handful of chopped fresh herbs (optional) such as coriander, parsley and chives.
Method
- Heat the olive oil in a large pan. Add the potatoes and onion and cook gently for 20 to 30 minutes until softened, without browning the onion.
- Beat the eggs in a large bowl. Season well and add the potatoes and onion mixture. Combine well and tip into a non-stick frying pan.
- Cook over a gentle heat for 10 to 12 minutes until set, then scatter over the sausage slices and cheese. Place under a hot grill until golden brown.
- Serve with the herbs scattered over (if using) and a crisp green salad.
