Spanish potato tortilla recipe

Rescue recipe: Tortillas are a tasty way to use up potatoes that are past their best, leftover cheese and cooked meats.


Spanish potato tortillaAllergens: contains eggs and milk.

Ingredients

1 tablespoon of olive oil.

350g potatoes, sliced thinly.

1 large onion, sliced thinly.

6 large eggs.

Salt and ground black pepper.

Leftover spicy sausage or ham (optional).

Cheese to sprinkle over.

Handful of chopped fresh herbs (optional) such as coriander, parsley and chives.

Method

  1. Heat the olive oil in a large pan. Add the potatoes and onion and cook gently for 20 to 30 minutes until softened, without browning the onion.
  2. Beat the eggs in a large bowl. Season well and add the potatoes and onion mixture. Combine well and tip into a non-stick frying pan.
  3. Cook over a gentle heat for 10 to 12 minutes until set, then scatter over the sausage slices and cheese. Place under a hot grill until golden brown.
  4. Serve with the herbs scattered over (if using) and a crisp green salad.
