Ingredients
140g butter, softened, plus extra for the tin.
2 large eggs, beaten.
140g self-raising flour.
1 teaspoon baking powder.
2 very ripe bananas, mashed.
Method
- Heat oven to 180C or 160C fan or gas 4. Butter a 2lb loaf tin and line the base and sides with baking parchment.
- Cream the butter and sugar until light and fluffy, then slowly add the eggs with a little flour.
- Fold in the remaining flour, baking powder and bananas.
- Pour into the tin and bake for about 30 minutes until a skewer comes out clean.
- Cool in the tin for 10 minutes, then remove to a wire rack.
Variations
Try the following, or your own ideas:
- when folding bananas into the mixture, throw in a few dark or milk chocolate chips (or chopped leftover Easter eggs)
- add a few chopped unsalted nuts for texture and flavour
- sprinkle a little Demerara sugar on the top before baking for a crunchy top
- mix a couple of tablespoons of icing sugar with a little lemon or orange juice and drizzle over the cake once its cooled
